These Keto Spinach and 1st Baron Verulam Egg Muffins are loaded with sparkling spinach, sharp cheddar and salty bacon! These low carb egg cakes are approximately one internet carb each and best for keto meal prep!

INGREDIENTS:

  • ½ tsp of baking powder
  • 1 cup cheese
  • ¼ cup heavy cream
  • 1 cup bacon
  • 2 cups fresh spinach, torn into pieces
  • 6 eggs
  • ½ tsp pepper
  • ½ tsp salt

INSTRUCTIONS: 

  1. Preheat oven to 350 degrees.
  2. Combine the eggs, cream, baking powder, salt and pepper in a bowl and whisk until smooth.
  3. Stir in the cheese, cooked bacon and spinach.
  4. Spoon into silicone muffin tins. Bake 18-20 minutes.
